Cilantro Marinated Rib-eye-Cooking Beyond the Box

It is a great time of the year for barbecuing and cooking out on the grill.  Try this marinade with a nice fatty rib-eye or another type of meat if you prefer.  

1 Each 1.5lb Boneless Rib-eyeCilantro Marinated Ribeye
1/4 Cup Bleu Cheese Crumbles
1 T Oil
Salt and Pepper to Taste 

For the Rib-eye Marinade:

1 T Yellow Onion, Diced
1/4 Each Jalapeno Diced
1 Clove of Garlic
1/4 t Garlic Powder
1/4 t Onion Powder
1/8 t Coriander
1T Fresh Cilantro Chopped
1/4 t Cumin
1 T Pink Grapefruit or Orange Juice
1/2 Lime Juiced

1. Combine all of the ingredients and mash with a mortar and pestle

2. Rub all over the Ribeye and let it sit for at least 3 hours.  

3. Season the ribeye with salt and pepper and rub with 1 T of oil

4. Grill the ribeye slowly until you hit a nice medium rare

5. Top the ribeye with our Fennel, Pink Grapefruit and Avocado Salad and Bleu Cheese
